A STAR IS BORN!

And so it begins: Majestic Chili's first day of business, at least in the eyes of the Office of Finance. There's still much to be done, and yet another license to secure. But things are progressing. And while I'm approved to prepare the chili, I still can't sell it! If all goes as planned, that will happen on June 6, 2009. Meanwhile, I've sent a query letter to Trader Joe's. Chef Larry suggested the use of soy chorizo in the vegan variety of Majestic Chili, and it ROCKS! Other soy products are slated for testing...

Been meaning to say Congratulations on getting your chili biz up and running! I will try to make it to the Farmers' Market to see you.
Re: soy chorizo, just wanted to have you considering using only USDA-certified soy products. Most non-organic soy protein and oil (that's used in zillions of products) is extracted from the soy bean with hexane, a petroleum derivative that leaves a residue of 14 - 21 PPM. Not a very well-publicized fact at this point in time. Go you!
